Pour 12 of the pasta sauce into a 20x20cm baking dish. Preheat the oven to 5000f. Pierce the chicken all over with a sharp knife. Season and simmer for 5 10 mins.
Then in bread crumbs. Place slices of mozzarella on top of chicken. Dip the flattened chicken breasts escalopes in the beaten egg followed by the parmesan breadcrumbs. Add in tomatoes and water season with salt pepper and chilli flakes and let simmer 10 minutes.

Season the chicken with salt and pepper. Add pepper and cover with clingfilm. Pour sauce into a 9 x 13 baking dish and place chicken in. Brush both sides of the cutlets with the herb oil.
Season with salt and pepper. Add the cutlets and cook just until brown about 2 minutes per side. Dip chicken in egg. When we have chicken parmesan at restaurants she always compares it to this recipe and each time the restaurant doesnt win.
Place chicken over sauce and cover with remaining sauce. Add coated chicken and pan fry for about 8 to 10 minutes each side or until chicken is cooked through and juices run clear. Put in a shallow dish and rub with the olive oil and garlic.
